Dr. Sankar DevarajanDr. Sankar Devarajan has been appointed assistant professor in nutrition and food science for the University of Arkansas at Pine Bluff Department of Human Sciences. He will teach undergraduate courses in experimental foods, food chain safety, food microbiology, food processing and food policy and law.

In this role, Dr. Devarajan will also be responsible for conducting research on timely nutrition and food science topics. He will be expected to build relationships with food industry businesses and agencies throughout the region to further the goals of the Nutrition and Food Science Program at UAPB and secure financial support.

“We are fortunate that Dr. Devarajan has decided to share his expertise in nutrition research with our community,” Dr. Brenda Martin, chair of the Department of Human Sciences, said. “He is excited to work here, and we are excited to work with him.”

Dr. Devarajan holds doctorate, master of philosophy and master of science degrees in biochemistry from Annamalai University, located in Chidambaram, India. He earned a bachelor’s degree in biochemistry from Bharathidasan University in Tiruchirappalli, India.

Prior to his appointment at UAPB, Dr. Devarajan worked as a research scientist at Fukuoka University Chikushi Hospital in Fukuoka, Japan from 2008 to 2016. He has also served in various faculty positions at Sultan Qaboos University in Muscat, Oman, the Vinayaka Missions University in Chennai, India and the Mahatma Gandhi Medical College in Pondicherry, India.

Dr. Devarajan has authored and co-authored numerous articles and manuscripts for scientific journals. One of his most recent abstracts, published in The American Journal of Science and Medicine, considered the health benefits of the regular use of sesame oil and rice bran oil to control hyperglycemia and improve lipid profiles in patients.

In 2015, Dr. Devarajan was awarded the Dr. Arakawa Cardiovascular Research Special Award by the Fukuoka University School of Medicine. In 2012, he won a New Investigator Award by the American Heart Association Council for High Blood Pressure.
